  • At A Cross-roads?

Have you ever had a day where you just don’t know where you fit?  So many options and possibilities and do not know were to go?

Well, this is me today!  Last year, I worked very hard at working at my career development and after securing a job in October as a media relations manager, I thought I had found my niche.   Unfortunately, this wasn’t the case.  For my best interests and stress level, I made the decision to leave the company.  I loved the position itself but sometimes, things aren’t all together to make it meant to be.

Almost two months later, I am still looking for new opportunities.  I know what I enjoy to do and where I excel, I am just at a crossroads of where to go next.  Where to start so to speak….

I have been thinking about the saying that goes if you cannot find an opportunity, create your own.  So this is what I am GOING to do!  I am not sure exactly what it will be or where it will lead me but I am determined to  get moving in the direction I want to.

Let’s do this!  If you have a dream, get up and work on it. We will do it together!

  • Switching to Vegetarian

    Grocery-Veggies-Stockpile

My family of six have decided to go vegetarian.  We are on day 2 and so far, everything has been great!  I stocked up on the weekend with many fruits and vegetables as well as nuts, milk, yogurt and healthy snacks.

What started this?  Well, we have always tried to eat clean but what began the thinking was a few weeks ago, there was a report in the news about factory workers at a turkey factory abusing the animals and it was caught on video.  I was so upset and flabbergasted by this that my immediate thought was that I am finished eating meat and I could not support that.  A day or two after, my family and I watched a show on Netflix about going vegan and it was a story about a woman going through her journey and visiting the meat plants. Needless to say, we all decided that day, that we were going to stop eating meat.

I did my searching on the internet for vegetarian meal ideas and even asked friends on Facebook for some ideas.  I came up with a weekly meal plan. With all of the vegetables I bought, we will need to ensure we eat them up before they go bad.  Other than one of my six-year-old daughters who is going to miss chicken fingers, everyone is very excited for this eating lifestyle.

Some people say that when you take meat out of your diet, you will be healthier while others say that we are human and are meant to eat meat.  In either case, everyone has their own thoughts which is completely fine.

I am very excited about this new change and I will share with you in the future how things are going and if I notice any health benefits and/or have a craving for meat.  Like I said earlier, it is only day 2 but awesome so far!

  • Who’s up for looking and feeling their best?

After watching my friend Lynn Pelzer‘s husband release 20.2 LBS and 16 inches in 30 days, using an amazing Superfood Nutritional Cleansing system, I decided it was time for me to experience similar results, because I was tired of feeling tired, and bloated.

I’m so excited to get started and to get my body back. I am starting my program this week and I’d love to have some of my good friends join me on this journey so we can hold each other accountable and get the healthiest we’ve ever been together.

  • I had a momentary lapse….

Today, my daughter left for Florida with her friend and family.  This had been planned for months, packing was done a few days ahead of time, tickets booked and all ready to go.

I thought I was ready for this but maybe not as much as I thought.

See, this is the first big trip my daughter has ever done.  This was her first time being on a plane and being in Florida.  I always expected that this would be with me, when she hit these experience milestones.

When they pulled away today to leave for the airport, I felt a few tears well up.

Really?  She is almost 10 years old and she needs these experiences.  She has the opportunity to experience this great adventure with her friend and her awesome family.  I am so happy that she is in great hands and I know that they will take care of her well.

Almost feels like de ja vu right now, maybe I dreamed it already! Beats me but all I know is that I had a momentary lapse of silliness and am very happy that she has arrived and having a blast.

Of course, I miss her but I know she is having a wonderful time trying new things and I am so blessed that she has wonderful people in her life who will give her this opportunity of travel and fun.   And 8 days will go by before we know it.

I just had a momentary lapse of silliness and that is okay.   I am a mother.  It is my job to worry about my children, ensure that they are happy and take all opportunities they can to make them more well-rounded individuals.  They grow up so fast and all you can do is to try your best, teach them life lessons and give them chances to explore different options so they can lead their own lives in the future.

Don’t sweat it, we got this!

  • Is this really the lazy way to lose weight?

I came across this post on Facebook today from The Natures Farmacy.  They say that if you mix raw honey, cinnamon and boiled water together, it will burn hundreds of calories and help you lose weight.
I do not generally believe these types of concoctions work as I have tried many over the years.  I am going to put this to the test and let you know if I notice or see any results.
    Recipe:
    2 tsp Honey
    1 tsp Cinnamon
    1 cup Water
    Directions:
    1) Use 1 part of cinnamon to 2 parts of raw honey. 1 tsp cinnamon to 2 tsp honey is recommended.
    2) Boil 1 cup/8oz/237 ml of water.
    3) Pour the boiling water on cinnamon. Cover it and let it steep until it is warm enough to drink.
    4) Add honey when the water is cool/warm. Never add honey when it is hot as the heat will destroy the enzymes and other nutrients in the raw honey.
    5) Drink 1/2 of this before going to bed. The other half should be covered and refrigerated and drink it in the morning. Do not re-heat it in the morning.
Do not add any flavors in this mixture. And this recipe only works if you drink it on empty stomach.
For more information about this recipe or to follow the Nature Farmacy, visit their Facebook page at https://www.facebook.com/thenaturesfarmacy
The recipe does not say how long to try this so I will begin by trying it for one week and see if I see any difference.
    Will keep you posted!

  • Egg Farmers of Canada help bring families together!

The EFO wants to bring families back to the table for the most important meal of the day and every day should start with some quality family time and a healthy breakfast made with Ontario eggs.

Looking for a more Canadian dish? Let your Canadian spirit shine through by preparing EFO’s spin on Eggs Benedict. This recipe features maple syrup and Montreal-smoked meat, two well-loved Canadian ingredients. Canadiana Eggs Benedict is quick and easy to make, so you won’t miss a moment of the action.

    Canadiana Eggs Benedict

    Canadiana Eggs Benedict

With the distinct flavour of Montreal smoked meat, this eggs benedict will be a breakfast or

brunch favourite you will love to enjoy at home.

    Serving:

    4

    Prep Time:

    5 minutes

    Cooking Time:

    5 minutes

    Ingredients

1 tbsp (15 mL) white vinegar

6 ozs (180 g) shaved Montreal smoked meat

    4 eggs

2 English muffins, split and toasted

    Maple Hollandaise Sauce:

    ¼ cup (60 mL) butter

    2 eggs

¼ tbsp (15 mL) pure maple syrup

1 tbsp (15 mL) lemon juice

Garnish: pinch of smoked paprika (optional)

    Directions

In a small skillet, warm smoked meat over medium heat until fragrant; keep warm.

Maple Hollandaise Sauce: Using a small pan, melt butter over low heat. In a small bowl, whisk

together 2 eggs, maple syrup and lemon juice until frothy. Slowly add egg mixture into melted

butter and whisk gently for about 6 minutes (or until sauce is thickened and coats the back of a

spoon) over low heat. Remove from heat and keep warm.

Meanwhile, in a large shallow saucepan filled halfway with water, add 1 tbsp (15 mL) white

vinegar and bring to a boil. Reduce heat so water is simmering.

Crack each egg to be poached into a small bowl or ramekin to gently slip into simmering water.

Poach for about for 3 to 5 minutes or until white is set and yolk is cooked as desired.

Top English muffin halves with warmed smoked meat. Using a slotted spoon, remove poached

eggs from water and place on top of smoked meat. Spoon Maple Hollandaise sauce over top of

each egg. Sprinkle with smoked paprika, if desired.

    Variation:

Regular Hollandaise Sauce: Omit maple syrup and add 1 tbsp (15 mL) of water.

Peameal Bacon Eggs Benedict: Omit Montreal smoked meat and substitute 4 slices

cooked peameal bacon and top each English muffin half. Top with poached egg. Whisk

in 1 tsp (5 mL) Dijon mustard into the Hollandaise sauce to serve.

    Tip:

To thicken the hollandaise sauce, simply heat and stir for 1-2 minutes longer until the sauce

thickens to your desired consistency. Keep in mind that the maple flavour will decrease the

longer you cook the sauce, so add more to taste.
