    Looking for a more Canadian dish? Let your Canadian spirit shine through by preparing EFO’s spin on Eggs Benedict. This recipe features maple syrup and Montreal-smoked meat, two well-loved Canadian ingredients. Canadiana Eggs Benedict is quick and easy to make, so you won’t miss a moment of the action.

    Canadiana Eggs Benedict

    Canadiana Eggs Benedict

    With the distinct flavour of Montreal smoked meat, this eggs benedict will be a breakfast or

    brunch favourite you will love to enjoy at home.

    5 minutes

    Ingredients

    1 tbsp (15 mL) white vinegar

    6 ozs (180 g) shaved Montreal smoked meat

    4 eggs

    2 English muffins, split and toasted

    Maple Hollandaise Sauce:

    ¼ cup (60 mL) butter

    2 eggs

    ¼ tbsp (15 mL) pure maple syrup

    1 tbsp (15 mL) lemon juice

    Garnish: pinch of smoked paprika (optional)

    Directions

    In a small skillet, warm smoked meat over medium heat until fragrant; keep warm.

    Maple Hollandaise Sauce: Using a small pan, melt butter over low heat. In a small bowl, whisk

    together 2 eggs, maple syrup and lemon juice until frothy. Slowly add egg mixture into melted

    butter and whisk gently for about 6 minutes (or until sauce is thickened and coats the back of a

    spoon) over low heat. Remove from heat and keep warm.

    Meanwhile, in a large shallow saucepan filled halfway with water, add 1 tbsp (15 mL) white

    vinegar and bring to a boil. Reduce heat so water is simmering.

    Crack each egg to be poached into a small bowl or ramekin to gently slip into simmering water.

    Poach for about for 3 to 5 minutes or until white is set and yolk is cooked as desired.

    Top English muffin halves with warmed smoked meat. Using a slotted spoon, remove poached

    eggs from water and place on top of smoked meat. Spoon Maple Hollandaise sauce over top of

    each egg. Sprinkle with smoked paprika, if desired.

    Variation:

    Regular Hollandaise Sauce: Omit maple syrup and add 1 tbsp (15 mL) of water.

    Peameal Bacon Eggs Benedict: Omit Montreal smoked meat and substitute 4 slices

    cooked peameal bacon and top each English muffin half. Top with poached egg. Whisk

    in 1 tsp (5 mL) Dijon mustard into the Hollandaise sauce to serve.

    Tip:

    To thicken the hollandaise sauce, simply heat and stir for 1-2 minutes longer until the sauce

    thickens to your desired consistency. Keep in mind that the maple flavour will decrease the

    longer you cook the sauce, so add more to taste.

  • Sometimes ,you need to step back and change your mindset!

    My life recently took a turn. I had been working in the field I had always wanted to,  in the type of position I had always wanted.  But then things changed.    Sometimes, even when things seem on paper that it would be perfect, it isn’t and you need to re-evaluate your future goals.  Don’t be afraid to say that something isn’t right for you.  Don’t let stress eat away at you.  Make sure people treat you properly.  I continue to know where I thrive and what motivates me to work hard for a purpose.  Don’t ever let someone make you feel as if you are not valued because YOU are and make sure you are passionate in your cause.  Be yourself and do what you feel is best for you, and not someone else.

    I recently left my job and I am extremely happy.  I am working on future possibilities and very excited about what will come.

    Be true to you, know that you are AWESOME even if you have a bad day and do not EVER doubt yourself!

    Work hard, love hard, and play hard!

  • Glama Gal Tween Spa Grand Opening in Newmarket

    The Glama Gal Tween Spa had its grand opening today in Newmarket. For us who were lucky to have got our tickets reserved in November, it was a lot of fun.

    The décor is pink and just awesome for a girl experience. From manicure and pedicure stations, to making your own lip gloss, bath crystals, candy, perfume scents, it was amazing.

    The staff was wonderful, the vibe was energetic and fun, and the girls were taken care of so well.  One of the staff told my 6-year-old daughter that when she comes, she will be treated like the “queen that she is”.  Incredible.

    The girls had a wonderful time getting pampered, enjoying some lemonade and snacks and dancing away to the beats of the music provided from a happening DJ.

    The girls are all requesting to have their next birthday parties here and are very excited to go back again.  This is definitely going to be a hot spot in Newmarket for the girls.  For the mom’s, I was also told today that they have a “Mom and Me” package if you would like to be pampered with your daughter (s).  I am so there!

  • Reflections of the year

    Well, it has been a LONG time since I have written.  I have been very busy the past few months and for those who have subscribed to my site, I am so sorry that I haven’t been here lately.

    I have been reflecting today on what 2013 held for me.  It was a very busy year but a good one indeed.

    The year began being entrenched in two fundraising courses and a lot of study while helping to organize a winter carnival for my children’s school. It was great and chaotic and busy but totally awesome and we had such a great turn out. It was a lot of fun.  Great reviews and the kids all had a fabulous time which was the main goal.

    I started on a health journey in April, lost 15 LBS and even started a part-time business on the side.  The business didn’t last longer than a few months but that was okay… you never know unless you try and it wasn’t the best timing so no regrets.

    My friend (who was also moonlighting as my career adviser I always told her) sent my writing to a friend and in June, I had my first “Hero Of the Month” column published in SNAP Newmarket.   It was about Harvey, the crossing guard who has been a part of my children’s school for years.  I began working at Snap part-time taking event photographs and also part-time advertising sales.

    In September, I made the hard decision to leave SNAP in hopes of finding a full-time position in the non-profit sector.

    Before I get to this, September was a big change for my family.  My twin girls were in grade one full-time and when they returned to school, I had always planned to go back to work.  Their first day of grade one was a very proud day and sad at the same time.  I knew they were ready and so excited but a bit sad for me as they were my last ones to go to school full-time.

    In October, I signed a contract for a position in Media Relations at the Cancer Recovery Foundation of Canada, in Markham.  Not only was this position what I had always been interested in working in, it was in the non-profit sector I wanted to be a part of.   Three months later, I am still there and very happy and excited every day to see what the day will bring.

    September, I volunteered to take on the role of Social Media for the Newmarket Food Pantry and have been doing that ever since. I helped coordinate the “Great Canadian Food Fight” in October along with Vince’s Market, Brian Johns and Joe Sponga.  Newmarket collected 14, 542 LBS of food which for the first year, was awesome.  Next year, we will rock it even more!

    In June, I was nominated to the Board of Directors for Girls Inc York Region.  As a mother of three girls, this was a no brainer. The support of girls to promote self-esteem and learn how to stand up for themselves is definitely a rewarding task.

    I am now a working mother (for a few months now) and working every day for a great cause that I absolutely love.  I am a member of the School Council for the 9th year and helping to organize the 2nd annual winter carnival.  My children are used to their new routine and thriving.

    With some time of for the Christmas holidays, I am looking forward to spending time with family and friends.

    I have met a lot of new and amazing people this year and you know who you are. You have made a difference in my life, and I love you all. I love living in Newmarket but the most important thing I have realized is that there are a lot of wonderful and caring people who are making a difference every day and I am proud to call you my friends.

    As we approach 2014, I am surrounded by a great family , friends and co-workers and look forward to what 2014 has to bring!  Many things are planned for the New Year which I am very excited for. (will leave that for a post in 2014)

    If we work together, we can do great things!

  • Vacation

    For the second year in a row, my family has taken a week vacation away as soon as school is over for the year and it is so nice to relax about being so busy the last two months with school and home activities.

    We rented a cottage and had a blast.  It was great to spend time with family and have a wonderful time.
